Lemon and ricotta is a beautiful flavor combination that I could put on almost anything. In this recipe the lemon ricotta is used as the base sauce and is topped with spinach, onions, and feta cheese.

What Pizza Crust to Use

You can make your own pizza crust or use a store bought pizza dough. You can even use a pre shaped pizza dough that you can just add on the toppings.

I love making and stretching my own crust. I use this pizza crust recipe almost every time.

What to Serve with Pizza

This pizza goes perfectly with a side salad. A few of my favorites are this simple Italian salad or the side kale salad.

Additional Toppings or Substitutions

This pizza has a base of lemon ricotta and is topped with spinach, onion, feta, and mozzarella. You can easily add more veggies like mushrooms or olives to this pizza to add more flavor. If you want to skip the spinach, add a handful of arugula on top after baking.

Ingredients

  • 1 pizza dough, homemade or store bought
  • 1/2 cup ricotta
  • 1/2 tsp lemon zest (about 1/2 of a lemon)
  • pinch of salt
  • 2 cups of spinach
  • 1/4 cup onion, sliced
  • 1 oz feta (about 1/4 cup)
  • 2 oz mozzarella (about 1/4 cup)
  • olive oil, for topping

Directions

  1. Heat oven to the highest setting your oven has, mine is 550°F. (Add the pizza steel to the oven, if using.)
  2. Make the ricotta base. Mix ricotta, lemon zest, and salt in a bowl and set aside.
  3. Prep the veggies. Chop the spinach and onion and set aside.
  4. Stretch the pizza dough on a pizza peel or a pizza baking sheet. (If you are using a pizza peel, make sure to sprinkle cornmeal underneath so it doesn’t stick.) Add the ricotta mixture to the pizza, then add the spinach and onion, and top with feta and mozzarella.
  5. Slide into the oven and cook until crust looks browned. About 6-8 minutes.
  6. Drizzle with olive oil and serve.
