A quick kale salad that makes the perfect side to almost any dish. This recipes is a quick homemade dressing, kale, and any topping you have (I use croutons and pecorino when I have them).

How to prepare kale for a salad?

I typically buy kale by the bundle at the grocery store. When I am ready to prepare it, I wash and dry it. You can dry your kale by adding it to a salad spinner or just placing it on a tea towel and patting it dry. Then I chop up the kale into thin strips. This makes it less tough and easier to eat.

The kale salad dressing

Now let’s make the kale salad dressing. For this I often put all of the ingredients into a small mason jar and shake it to mix it up. Make sure to taste after mixing it to see if it needs more salt, vinegar, pepper, etc. Everyone has different taste and you want to make it perfect for you.

Putting it all together

After you prepped the kale and the dressing, just mix the 2 together. I often just mix it with my hands to get all the kale covered and to soften up the kale. Since the kale is pretty tough, you can do this in advanced and let it sit for 30 minutes or so while you prepare the other part of your meal.

Ingredients

  • 2 tbsp of olive oil
  • 1 tbsp of white wine vinegar
  • 1 clove of garlic, minced
  • salt and pepper
  • 1 bunch of kale, about 8 ounces
  • Croutons
  • Pecorino or Parmesan

Directions

  1. Wash and chop your kale and place it in a bowl. I like to chop it into thin pieces to make it easier to eat.
  2. Make the dressing by mixing together the olive oil, vinegar, garlic, salt and pepper.
  3. Pour the dressing over the kale and massage the dressing into kale. I just use my hands but you could also using tongs.
  4. Let the salad sit for about 10 minutes to let the kale soften.
  5. Top with croutons and freshly grated pecorino cheese.
