Mushroom and goat cheese is a classic pizza combination, but adding in the brightness of the basil pesto really brings this pizza to life.

You can use your favorite choice of pizza dough or use our homemade dough recipe to make this delicious pesto pizza recipe.

What type of pizza dough should I use for this pizza?

I love a classic Neapolitan style dough so I like to use this homemade pizza dough recipe. You could also use a pre-made crust or store-bought pizza dough. You can find pizza dough at some grocery stores like Trader Joe's in the chilled cheese section.

If you are really into making pizzas and you have an Ooni pizza oven, I would use this Ooni pizza dough recipe.

A classic thinner style pizza dough works best for this mushroom pesto pizza. I have not tried these toppings with a thick crust or Detroit style crust. You could try it, just know you will probably need more toppings that the recipe suggests.

Best Pesto for Pizza

Pesto is a great alternative sauce for your pizza if you want to mix it up for the classic tomato sauce. When choosing a pesto you can really pick whatever your preferences are. I think a classic basil pesto, also called pesto genovese, works the best here. You can make your own or get store-bought pesto. If you want a quick homemade pesto recipe here is one I love to use. Just add it all the a food processor and blend until smooth.

  • 1 cup fresh basil, packed (about 25g)
  • 1/4 cup parmesan
  • 1/4 cup olive oil
  • 1/2 cup pine nuts
  • 1 clove of fresh garlic
  • 2 tbsp lemon juice
  • 1/4 tsp salt
  • black pepper

Best Mushrooms for Pizza

When choosing mushrooms for pizza you want something that has a lot of flavor and with crisp up nicely. I love using baby bella or cremini mushrooms. These are very easy to fine and always work great. If you are looking for something special try to find miatake mushrooms or oyster mushrooms. Both of these mushrooms peel into pieces very nicely and they like to get nice and crispy.

I don’t love shiitake mushrooms on pizza because they are a little chewier. Lions mane mushrooms are another one that doesn’t work the best on pizza. Since you are cooking the pizza for such a short amount of time, you want something the will cook quickly.

Additional Topping Ideas

Once the pizza in cooked I love to add some fresh greens like arugula or micro greens. You want to add these after the pizza is out for they don't wilt in the oven.

I also think a drizzle of olive oil and salt in a great addition to really bring out the flavor in everything.

If you are looking for some other pizza toppings you could add a sprinkle for red pepper flakes for some heat or some grated parmesan cheese for extra saltiness.

What to serve with a mushroom pesto pizza?

A great way to pair this delicious pizza is with a large side salad. I love this Simple Italian Side Salad, Chopped Dill and Feta Salad, or Simple Kale Salad. You can also make double so you have extra pizza for later.

Ingredients

  • 1 pizza dough, homemade or store bought
  • 1/2 cup basil pesto
  • 6 oz mushrooms, sliced*
  • 1 shallot, sliced*
  • 3 oz mozzarella cheese, shredded
  • 2 oz goat cheese
  • arugula or micro greens for topping
  • olive oil and salt, for topping

Directions

  1. Heat oven to 500°F and place in a pizza steel or pizza stone if using.*
  2. Stretch your pizza dough on to a wooden pizza peel. Make sure to sprinkle some flour or corn meal under your pizza dough to make sure you can slide it off into the oven easily. If you are not using a pizza steel in the oven just stretch your dough on to your baking sheet or pizza pan.
  3. Add the pesto sauce as the pizza base then top with mushrooms, shallot, mozzarella, and goat cheese. Place in the oven and back until crust is starting to brown and the cheese is melted. Depending on your pizza dough and oven this should take 4 - 8 minutes.
  4. Removed the pizza from the oven and top with some fresh arugula or micro greens, a drizzle of olive oil, and a pinch of salt.
  5. Serve and enjoy right away!
