Bring your grilled cheese sandwiches to a whole new level with this pesto and sun-dried tomato grilled cheese. With only 5 ingredients it comes together super quick and is packed with flavor.

Ingredients and Substitutions

  • Bread: You can use any type of bread for this recipe. I love a sourdough bread or wheat bread for a grilled cheese sandwich.
  • Pesto: Store bought pesto works great here but you can also make your own. To make homemade pesto, there is a quick recipe in the notes. You could also make a kale pesto or spinach pesto recipe.
  • Cheese: This grilled cheese uses a blend of fresh mozzarella and parmesan. I think this is the best choice because the mozzarella gives it that creamy, gooey cheese while the parmesan brings in some saltiness. You could also use pecorino or provolone cheese if you prefer.
  • Sun Dried Tomatoes: Use sun-dried tomatoes from a jar. I like the ones that are packed in oil. If you can find them already chopped, that is great. If they aren’t, just roughly chop them before adding them to the sandwich. If you don't like sun dried tomatoes you could add a few slices of fresh tomatoes instead.

If you want to add more greens, feel free to add in a handful of fresh spinach.

What to Serve with Pesto Grilled Cheese

Serve this grilled cheese along side some chips or fries. You could also serve it with some soup like this white bean chili or tomato soup.

Tips for the Best Grilled Cheese

In my opinion the best grilled cheeses are nice and crispy on the outside and gooey on the inside. Here are a few tips to get the best grilled cheese.

  1. Heat the pan before making the grilled cheese. Whether you are using a cast iron pan or a griddle, make sure to heat the pan for a few minutes before adding the sandwich. This way it will start to crisp right away.
  2. Don’t over butter your bread. Add a little bit of butter to get a crispy outside, but if you add too much butter is can get soggy.
  3. Add a lid to melt the cheese. If the outside of your sandwich is cooking quickly but the cheese inside hasn’t melted, add a lid over the sandwich to help heat up the whole sandwich. This will help you get melted cheese in no time.

Ingredients

  • 4 slices of bread
  • 1/2 cup pesto, homemade or store bought (recipe in notes below)
  • 1/2 cup shredded mozzarella
  • 1/4 cup grated parmesan
  • 1/4 cup sun dried tomatoes, chopped

Directions

  1. Heat a griddle, frying pan, or cast iron pan over medium heat.
  2. Butter the outside of the bread slices. On the inside of the bread add the pesto, cheese, and sun dried tomatoes. (The amounts may vary depending on your size of bread so don’t feel like you need to stick exactly to the recipe amounts.)
  3. Add the sandwich, butter side out, to the pan and cook until it is nice and golden brown on both sides.

Notes

You can also make this in a panini press if you have one.

For a homemade pesto blend all of these together in a food processor until smooth.
