Sweet and smokey sweet potato hash mixed with roasted red pepper and onion to make the perfect breakfast, dinner, or side dish.

Sweet potato hash is a quick go to meal for when I don’t feel like cooking. You can chop everything up, add it to the oven and top with an egg. It’s perfect for a weekend breakfast or a quick weeknight dinner.

How to get the sweet potatoes crispy?

The secret to getting the sweet potatoes crispy, is by adding a little bit of olive oil and letting them sit in the oven undisturbed. I usually go in and toss them half way through. If you go and move them around too much during the baking process they will start to fall apart.

What veggies to add?

I will always add some onion to the hash, but sometimes I like to add a few other veggies. Red pepper is probably my favorite. You could also add other types of peppers, broccoli or cauliflower.

You want to let the potatoes cook for a little bit before adding in other veggies since they need more time to cook. If you are cooking for 1 or 2, you can add the veggies right on to the same tray. If your sweet potato tray is full, I would add them to a new tray.

Can you make this with yams?

Funny you should ask. The first time I went to make this recipe, I accidentally bought yams instead of sweet potatoes 🤦‍♀️. To my surprise, the yams turned out great! I baked them the same way I bake the sweet potatoes and they came out perfectly. If you prefer yams or that is all you can find, you can definitely use that instead.

Should I peel the potatoes?

Peeling your potatoes comes down to personal preference. I don’t peel my potatoes in this recipe. Since they are being roasted, I don’t really notice the skin. It also saves time to leave them as is.

The skin of sweet potatoes also contains a lot of the antioxidants, so keeping the skin on gives you a nutrient boost.

With that being said, if you hate the texture of potato skin, you can peel them and they will still turn out great.

Is this sweet potato hash vegan?

Yes, the hash is completely vegan. I suggest putting an egg on top, but you can easily skip that step.

Is this sweet potato has gluten-free?

Absolutely! No gluten is any of the ingredients here.

Ingredients

  • 2 sweet potatoes, chopped into 1/2 inch pieces
  • 1 red pepper, chopped
  • 1 onion, sliced
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp garlic powder (optional)
  • 1/4 tsp smoked paprika (optional)
  • Optional Toppings: fried or soft boiled egg, avocado, green onion, parsley

Directions

  1. Pre-heat oven to 425°F
  2. Place chopped sweet potatoes on a parchment lined baking sheet. Add olive oil, salt, garlic powder, and smoked paprika to the sweet potatoes. Toss together to combine.
  3. Place sweet potatoes in the over and cook for 15 min.
  4. After 15 minutes, take out the sweet potatoes and add the red pepper and onion. Toss everything together and cook another 15-20 minutes.
  5. It is done when the sweet potatoes have a crispy edge but they are easily poked with a fork.
