My favorite weekend breakfast has always been a good breakfast sandwich. It has a little bit of everything. This bagel breakfast sandwich had creamy soft scrambled egg, an avocado mash, and sharp cheddar cheese. It comes together fairly quickly so make sure to have all the ingredients prepped before you start.

Best way to cook eggs for a breakfast sandwich

I think scrambled eggs are the best option for a breakfast sandwich. Anything with a runny yolk can get a little too messy. When I make scrambled eggs I love a good soft scramble. To make a soft scramble you want to cook your eggs low and slow. Use a spatula to stir around your eggs as they cook so everything cooks evenly. You don’t want any overly cooks bits of egg. It takes a little longer but it is so worth it!

What cheese goes best on a breakfast sandwich?

There are many cheeses you can use on a breakfast sandwich, but I think the best is a sharp cheddar cheese. It melts great and it’s the perfect mix of creamy and salty. If you don’t have or don’t like cheddar you can also use American, Manchego, or pepper jack cheese.

What kind of bagel should I use for a breakfast sandwich?

The best bagels to use for breakfast sandwiches are plain, everything, or sesame bagels. You can use other ones as well, just try to avoid anything too sweet.

What to serve with a breakfast sandwich?

If you are look for a larger breakfast, you can serve the breakfast sandwich along side a fruit salad, or potato hash. This sweet potato hash makes a great side dish.

Ingredients

  • 2 bagels (everything, plain, or sesame)
  • 3 eggs
  • 1 tbsp butter
  • 1/2 cup (1 oz) sharp cheddar cheese, shredded
  • 1 avocado
  • 1/4 tsp salt
  • 1/4 cup micro greens or regular greens (optional)
  • 2 slices of tomato (optional)

Directions

  1. Slice and toast your bagels.
  2. After they are toasted, add shredded cheese to one side of the bagel.
  3. Make your avocado mash. In a small bowl add avocado and salt and mash until you have a chunky mash.
  4. Make soft scramble eggs. Whisk you eggs in a small bowl. Heat a skillet over medium-low heat and add 1 tbsp of butter. Once the butter is melted, add your eggs. Stir around the eggs as they cook. You want to make them low and slow. This makes them super creamy and everything cooks the same.
  5. Once the eggs are cooked, add them on top of the cheddar side of the bagel. Top with micro greens and tomato, if using. Add the avocado mash to the other side and serve!
