If you love cozy, cheesy dinners that come together in one pan, these Cheesy Tomato Pizza Beans are about to be your new weeknight favorite. The white beans simmer in a garlicky tomato sauce, then gets topped with mozzarella, and finished under the broiler to get a melty and crispy top.

This easy skillet beans recipe is packed with plant-based protein, made with pantry staples like canned beans and diced tomatoes, and ready in under 30 minutes.

Substitutions and Variations

Make it Spicy

Add in extra red pepper flakes or Calabrian chili when cooking. You can also top the beans with your favorite chili oil when they’re done.

Add Protein

This meal is already protein packed with the beans, but you can also add in sausage (regular or veggie) or top with pepperonis.

Add Veggies

One of my favorite ways to mix up this recipe is to add in extra veggies. After cooking the garlic, add in chopped red pepper, mushrooms, or zucchini. Cook for 3-5 minutes before adding in the diced tomatoes and beans.

You could also add a handful of spinach after step 2. Mix in the spinach until wilted, and then add the cheese on top and broil.

Make it Vegan

If you want to make this recipe vegan, use a vegan mozzarella on top. You could also skip this step and top it with some vegan parmesan or nutritional yeast.

What to Serve with Pizza Beans

My favorite way to serve pizza beans is with toasted sourdough or garlic bread. These are great to serve alongside a simple kale caesar salad or spinach arugula salad.

Another way to eat pizza beans is on top of a baked potato. This is a great way to enjoy them as leftovers!

How to Store Beans

  • Store in an airtight container for 4–5 days in the refrigerator.
  • Reheat in microwave or place in the oven for 10-15 minutes.
  • If the beans seem really thick, add a splash of water when reheating.
  • I would not place these in the freezer. I think they are best eaten right away or within the week.

Ingredients

  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 tbsp tomato paste
  • 1 (14oz) can diced tomatoes
  • 1/2 cup water
  • 3 (15oz) cans white beans (great northern or cannellini beans)
  • 1 tsp kosher salt
  • 1/4 tsp red pepper flakes
  • 4oz (1 cup) shredded mozzarella
  • fresh basil, for serving
  • toasted bread, for serving

Directions

  1. Heat olive oil in an oven-safe skillet over medium heat on the stove. Add garlic and cook for 1 minute, add in the tomato paste and cook for 1 more minute.
  2. Add in the diced tomatoes, water, beans, salt, and red pepper flakes. Cook over medium heat for 10 minutes.
  3. Add the mozzarella to the top and place under the broiler for 5 minutes or until the cheese is melted and slightly browned.
  4. Remove from the oven and top with fresh basil.
  5. Serve with toasted bread.
