There is something so comforting about chocolate chip pancakes. Pancakes are a staple in our house on Sunday morning and these are one of our favorite.

These chocolate chip pancakes come together pretty quickly and they are a crowd pleaser. You can easily double or triple the recipe if you are making it for a group.

Chocolate Chip Pancake Toppings

Maple Syrup: Syrup is a must with pancakes. All the other toppings are optional.

Walnuts or Pecans: Roughly chop walnuts or pecans to add to the top of you pancakes.

Berries: I love any type of berry. My favorites are sliced strawberries or raspberries. Make sure to use fresh, not frozen berries.

Whipped Cream: If you want to be extra indulgent you can add whipped cream to the top. Make sure to sure to use vegan whipped cream if you want to keep the recipe vegan.

Yogurt: This is something I just tried recently and it was really good! Add a dollop of plain or vanilla vegan yogurt to the top of your pancakes. It’s not for everyone but if you like yogurt I’d give it a try.

Ingredients

  • 1 cup (130g) all purpose flour
  • 1 tbsp (14g) sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 tsp ground cinnamon (optional)
  • 1 cup (225g) almond milk
  • 2 tbsp (25g) coconut oil, melted (or sub vegetable oil)
  • 1 flax egg*
  • 1 tsp vanilla
  • 1/4 cup chocolate chips
  • Topping Ideas: Syrup, Walnuts, Berries

Directions

  1. Heat up a griddle or fry pan while you mix together the ingredients.
  2. Whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon In a large bowl.
  3. Add the wet ingredients to the same bowl: milk, vegetable oil, flax egg, and vanilla. Mix until combined.
  4. Spray the griddle or pan with non-stick spray and use a ladle to pour the batter onto the pan.
  5. Once you see the pancakes start to bubble slightly, add the chocolate chips on top.
  6. Flip pancakes to cook the other side.
  7. When done, transfer to a plate. Serve with syrup, nuts, or berries!
