This dish comes together fairly quickly. Most of the ingredients are blended into the sauce and then all mixed together at the end.

When making this recipe you can use the same pot of water to cook your broccoli and the orzo. This cuts down boiling time and saves you from cleaning an extra pot.

Can I substitute orzo for other pasta?

Absolutely. I would try to stick with a short grain pasta such as a rigatoni or shells. Anything long like spaghetti doesn’t work as well with this sauce.

Make it a Meal

You can have this pasta salad as your main meal or as a side dish. If you are having it on the side it goes great with a seared salmon. I also love it as a a side to a sandwich or soup.

Ingredients

  • 1 head of broccoli florets (about 5 cups)
  • 1 1/2 cup orzo
  • 2 cups kale, chopped
  • 3 garlic cloves, minced
  • 1/2 cup parmesan
  • 1 lemon, juice and zest
  • 2 tbsp olive oil
  • 1/4 cup sour cream
  • 1/2 tsp salt
  • black pepper
  • 1/4 cup sunflower seeds or pine nuts (optional)

Directions

  1. Heat a large pot of water over high heat. Once boiling, add broccoli florets. Cook for about 2 minutes to soften and then remove with a slotted spoon.
  2. Add orzo to the boiling water and cook for 4-6 minutes. (You can use the same water that you boiled the broccoli in). Strain in a fine mesh strainer and set aside.
  3. Make the sauce. Add half of the broccoli florets, the kale, garlic, parmesan, juice from 1 lemon, zest from 1 lemon, olive oil, and sour cream to a food processor. Blend until smooth.
  4. In a large bowl mix the orzo, the remaining broccoli, and the sauce. Toss until well combined.
  5. Top with extra parmesan and sunflower seeds or pine nuts.
