Having fresh strawberry popsicles on a hot summer day is one of my favorite parts about summer. Making your own popsicles is so fun because you can use fresh fruit that is in season. You can also control what goes in it to make it to your liking. The best part about making your own popsicles is that the flavor is so much more fresh that store-bought popsicles.

Strawberry Lemon Popsicle Ingredients

This strawberry popsicle recipe has very simple ingredients. Feel free to change up the amount of each ingredient to what you prefer.

  • Strawberries: Use fresh ripe strawberries with the green tops cut off. Don’t worry about cutting them beforehand. They are all going in the blender so that’s not necessary. Try to find them from a local farm if you can, the grocery store also typically has fresh strawberries.
  • Sugar: This recipe uses granulated sugar. Feel free to adjust the amount of sugar. Just know if you use less sugar they will be icier popsicles. You could also use maple syrup as the sweeter.
  • Lemon: I love the additional of lemon here. This recipe uses both the juice and zest.
  • Strawberry Jam: To give these popsicle a nice texture and a more concentrated strawberry flavor I add a little bit of strawberry jam. You can add this in when you mix everything together but if you want to have some chunks of jam, add it right at the end after everything else has been blended.

How to Make Homemade Strawberry Popsicles

Making homemade popsicles is actually super easy! Just blend everything together. Then add the popsicle mixture to a popsicle mold. Let them freeze until hard and you have the perfect summer treat! You can change up the ingredients to make them perfect for you.

What Popsicle Molds Should I Use

For best results I use a silicone popsicle mold (left image). It makes it easy to push out the popsicle from the mold. You can also use a mold that has handles incorporated (right image) in it so you don’t need popsicle sticks..

How to Store Homemade Popsicles

Keep you popsicles in the mold and your take them out as you eat them. If you want to take them all out at once make sure to wrap them in parchment paper or plastic wrap so they don’t get stuck together. Then place them in a freezer bag to store.

What You’ll Need

All you need is the possible mold, a freezer, and a blender or food processor to make these homemade strawberry popsicles.

Ingredients

  • 4 cups (425g) strawberries
  • 1/4 cup (50g) granulated sugar
  • 1 tbsp lemon juice
  • 1/2 tsp lemon zest (about 1/2 lemon)
  • 1/4 cup strawberry jam

Directions

  1. Blend all of the ingredients in a blender until smooth.
  2. Pour the strawberry mixture into a popsicle mold and place in the freezer until hard, about 2-3 hours.
  3. If using a mold that you need to add popsicle sticks, take out the mold after 30 minutes and place in the sticks. Freezing it a little bit first will help so the sticks don’t sink to the bottom.
  4. Remove from the mold and enjoy!
