Hand pies are like little pockets of happiness that are filled with something delicious. They're perfect for picnics, parties, or just when you need a little treat. Plus, they're super easy to make and customizable to suit your taste preferences.

What pastry to use?

When making hand pies, puff pastry is a great option because it's easy to work with and bakes up beautifully. You can find puff pastry in the frozen section of most grocery stores. For this recipe, you will need one package of puff pastry.

What jams to use?

In this recipe I use a mixed berry jam. I have also made this with raspberry jam and peach jam. I think you can use which ever one you like the best.

Ingredients

  • 1 package (14oz) puff pastry
  • Any type of jam (berry and peach are my favorite)
  • 1 egg
  • Turbinado sugar, for topping (substitute with cane sugar or brown sugar)

Directions

1. Preheat the oven to 375°F.

2. Cut the puff pastry into 4 6-inch squares. With each square, cut 2 lines from the center of the side to almost the center of the square. you still want the piece connected in the center. Then you want to cut 2 sections into smaller strips. See the photo below for reference.

3. Add 1 heaping tsp of jam the bottom square. Fold the other full piece over the jam and press down on the edges.

4. Now you are ready to create the pattern. Take one slice of dough from one side and then the same piece from the other side and continue until all the strips are added the the top.

5. Place the pastries on a parchment lines baking sheet. Whisk the egg in a small bowl. With a pasty brush give the pastries an egg wash. Sprinkle sugar over top. Right before baking, take a toothpick and poke a few holes in the top. This helps steam get out so it doesn’t break open your pastry from the bottom.

6. Place in the oven and bake 28-32 minutes or until the tops are nicely browned and the pastries have puffed up.

7. Let cool for at least 5 minutes before serving.
