Oatmeal is my go to breakfast everyday of the week, but if I want something a little extra delicious I make this baked blueberry oatmeal that is loaded with banana, cinnamon, and pecans. It comes together quickly and it stores really well.

Oatmeal as a breakfast or snack is a great additional to your diet. Oatmeal is loaded with protein and fiber so it keeps you full for longer. It’s also loaded with vitamins, minerals, and antioxidants.

Can I make this baked oatmeal vegan?

Absolutely! Instead of using eggs use flax eggs. To make a flax egg mix 1 tbsp of ground flaxseed with 2 1/2 tbsp of water and let sit for 5 minutes. It will form a sticky paste that works to hold everything together, similar to an egg.

Also, make sure to use a plant based milk. I use almond milk and it works great.

Can I make this baked oatmeal gluten free?

Make sure to use gluten free oats, but besides that this recipe is completely gluten free.

How to Store

You can make this now and then have it throughout the week. I would bake it before you store it. This oatmeal keeps well in the refrigerator, covered, for 4 to 5 days. You can eat it cold or reheat it in the microwave for 1 minute.

Ingredients

  • 1 ripe banana
  • 2 cups rolled oats
  • 1/2 cup roughly chopped pecans
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 2 cups milk (regular or plant-based)
  • 1/4 cup maple syrup
  • 2 eggs or flax eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cup + 1/2 cup blueberries
  • 1 tbsp brown sugar (optional)

Directions

  1. Preheat the oven to 375°F. Grease a 8-9” square baking dish.
  2. Mash 1 banana in a large bowl. Add in all the other ingredients, except for the blueberries and the brown sugar. Mix together.
  3. to the grease baking dish, add 1 1/2 cup blueberries to the bottom. Pour the oatmeal mixture on top.
  4. Scatter the remaining 1/2 cup of berries and sugar to the top.
  5. Bake for 35-40 minutes or until top is slightly golden brown.
  6. Let cool for 10 minutes before eating.
