Can I make this baked oatmeal vegan?
Absolutely! Instead of using eggs use flax eggs. To make a flax egg mix 1 tbsp of ground flaxseed with 2 1/2 tbsp of water and let sit for 5 minutes. It will form a sticky paste that works to hold everything together, similar to an egg.
Also, make sure to use a plant based milk. I use almond milk and it works great.
Can I make this baked oatmeal gluten free?
Make sure to use gluten free oats, but besides that this recipe is completely gluten free.
How to Store
You can make this now and then have it throughout the week. I would bake it before you store it. This oatmeal keeps well in the refrigerator, covered, for 4 to 5 days. You can eat it cold or reheat it in the microwave for 1 minute.
